Ingredients For Cake Base
- 3 and 2/3 cups (420g) spooned and levelled cake flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1 and 1/2 cups (345g) unsalted butter, softened
- 2 cups (400g) granulated sugar
- 3 large eggs + 2 additional egg whites
- 1 Tablespoon pure vanilla extract
- 1 and 1/2 cups (360ml) buttermilk
Vanilla Buttercream Ingredients
- 1 and 1/2 cups (345g) unsalted butter
- 6 cups (720g) confectioners’ sugar
- 1/3 cup (80ml) whole milk or heavy cream
- 1 and 1/2 teaspoons pure vanilla extract
- 1/8 teaspoon salt
Let’s Get Started
- Start by preheating the oven at 350°F (177°C). Grease three 9-inch cake pans, line with parchment paper, then grease the parchment paper, so that once baked the cake seamlessly get released from the pans.
- Prepare the cake batter by whisking cake flour, salt, baking powder, and baking soda together in a large bowl. Set this bowl aside.
- Beat butter and sugar with the help of handheld or stand mixer for about 3 minutes till the consistency becomes smooth and creamy. Further, beat in the 3 eggs, 2 egg whites, and vanilla extract on high speed until mixed properly, for about 2 minutes more.
- Further, add the dry ingredients and mix them well at a lower speed. Pour buttermilk and whisk it all together with your hands to ensure that no lumps or air bubbles are formed in the batter. This batter should be of thick consistency.
- Once the batter is ready, pour it evenly in the 3 baking pans. Bake of 25 minutes or so, to bake the cake properly. When you feel, it’s done, set it aside to cool it down.
- Now prepare the frosting of the cake. Beat butter until creamy, for about 2 minutes. Set the speed of mixer on low speed and add confectioners’ sugar, milk, vanilla extract, and salt. For about 3 minutes, increase the speed of the blender or mixer. If the consistency turns out to be thin, then make sure to add more confectioners’ sugar and more milk, if the consistency is too thick.
- Once all of these steps are done, slice a thin layer of the cake so that it creates a flat surface. Place 1 layer of this slice on a serving plate and cover the top with frosting. Then, take the 2nd layer and similarly, top it up with frosting. Finally, take the 3rd layer and do the same. Spread the leftover frosting throughout the cake tops and sides. You can use an icing spatula to do so!
- Put it in a refrigerator at least for an hour or so, to help the cake take its proper shape.
